I’m excited to report that it is possible to make really good boxed macaroni and cheese! It’s only taken me something like 17 years of making boxed mac and cheese to discover that it is possible to make it really amazing. Here’s the trick: don’t follow the box instructions! Boil the noodles (and I always add more because there’s never enough in the box) then drain them. While the noodles sit in the strainer, melt the butter in the empty pan. Use the recommended amount or add more proportionally if you added more noodles. After the butter is melted add half and half (Use the measurement for milk on the box or increase proportionately.) and whisk in the cheese powder. When it’s smooth and creamy, mix the noodles back into the pot. This will be the yummiest box mac and cheese you have ever had. It will be creamy and delicious and void of nasty powdered cheese clumps. Enjoy!
